Ingredients

  • 1 cup unsweetened almond milk
  • 2 tbsp macadamia nuts (soaked for creaminess)
  • 1 tsp pure vanilla extract
  • 2 tbsp heavy cream (or coconut cream for dairy-free)
  • 1 tbsp keto-friendly sweetener (erythritol/stevia)
  • 5 ice cubes

Equipment

  • 1 Blender
  • 1 Measuring Cups & Spoons
  • 1 Stirring Spoon
  • 1 Glass jar or serving cup

Method

  1. Prepare the base: Begin by pouring 1 cup of unsweetened almond milk into your blender to act as a light, creamy base for the smoothie.
  2. Add macadamias: Drop in 2 tablespoons of soaked macadamia nuts; soaking will make them blend easily and add a creamy, nutty flavor to the drink.
  3. Add flavor: Add richness and depth by pouring in 1 teaspoon of pure vanilla extract and 2 tablespoons heavy cream (use coconut cream to keep it dairy-free).
  4. Sweeten to your taste: Put about 1 tablespoon of keto-friendly sweetener into it, like stevia or erythritol and then adjust based on how sweet you want your smoothie.
  5. Blend with ice – Toss in 4–5 ice cubes and blend everything until silky smooth with no nut chunks left. Pour into a glass, serve chilled, and enjoy immediately.

Notes

  • Now – our macadamia nuts to get soft, 2-3 hours sufficient.
  • Include unsweetened cocoa powder for a chocolate variation.
  • It tastes even better with cold almond milk.
  • Add chia seeds or sugar-free chocolate chips to the top for a bit of crunch.
  • Throw in a scoop of keto protein powder and turn it into a complete meal replacement.
