Ingredients
  

  • 2 lbs ground turkey
  • 1 cup almond flour or crushed pork rinds
  • 2 large eggs
  • 1 small small onion
  • 2 cloves garlic
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 tsp dried oregano
  • 1 tsp paprika
  • ½ cup sugar-free ketchup (divided)
  • 2 tbsp fresh parsley, chopped

  • 1 Mixing Bowl
  • 1 Loaf pan
  • 1 Measuring cups and spoons
  • 1 Spatula or spoon
  • 1 Oven

Method
 

  1. Heat the oven: First, preheat your oven to 375°F (190°C) and grease a loaf pan with a little oil so the bread won’t stick.
  2. Prepare the Mixture: In a large bowl mix together the ground turkey with the almond meal or crushed pork rinds, eggs, onion, garlic, seasonings, and half the sugar free ketchup. Mix until everything is just combined.
  3. Shape the loaf: Scoop the mixture into the center of the loaf pan, and use your hands to press and smooth it flat into a loaf shape.
  4. Add Glaze: Spread the rest of the ketchup evenly over the top of the loaf as a yummy glaze.
  5. Bake: Insert the pan into the oven and bake for approximately 50 minutes, or until the internal temperature is 165°F (74°C).
  6. Rest and serve: Remove from oven and let cool ten minutes before slicing and serving warm.

Notes

  • Do not mix too much as it will create a dense meatloaf.
  • Check for doneness with a meat thermometer.
  • Then there is the addition of the grated zucchini, which provides all kinds of moisture.
  • Let it stand so that it holds its shape before cutting.
  • Make a double batch for meal prep and freeze slices.
