Ingredients
  

  • 2 tbsp Olive Oil
  • 3 cloves Garlic (Minced)
  • 1 small Onion (Finely Chopped)
  • 2 cups Fresh Tomatoes (Blanched and Chopped) or 1½ Cups Canned Crushed Tomatoes (No Sugar)
  • 1 tsp Salt
  • ½ tsp Black Pepper
  • ½ tsp Chilli Flakes (Optional)
  • 1 tsp Dried Oregano
  • 1 tsp Dried Basil
  • ½ tsp Onion Powder
  • 1 tsp Apple Cider Vinegar
  • ½ tsp Erythritol Or Monk Fruit Sweetener (Optional, For Balance)

  • 1 Wooden spoon

Method
 

  1. Heat the oil: Warm 2 tbsp olive oil in a saucepan over medium heat.
  2. Sauté aromatics: Cook minced garlic and chopped onion until soft and fragrant.
  3. Add tomatoes: Stir in chopped fresh or canned tomatoes and mix well.
  4. Season the sauce: Add salt, pepper, herbs, chili flakes, and onion powder.
  5. Simmer: Let it simmer uncovered for 20–25 minutes, stirring occasionally.
  6. Balance the flavour: Add apple cider vinegar and keto sweetener, then stir.
  7. Blend (optional): Use a blender if you want a smooth sauce texture.
  8. Let it rest: Turn off heat and rest the sauce for 5 minutes before use.

Notes

  • Use fresh tomatoes in season for better taste and fewer preservatives.
  • Blanch tomatoes first to remove the skin easily before cooking.
  • Add a pinch of cinnamon or smoked paprika for depth of flavor.
  • Store in an airtight glass jar in the fridge for up to 5 days.
  • Freeze in portions for longer storage and easy meal prep.
