Ingredients
  

  • 2 cups riced cauliflower (steamed and squeezed dry)
  • ½ cup shredded cheddar cheese
  • ¼ cup grated Parmesan cheese
  • 1 egg
  • ¼ cup almond flour
  • ½ tsp garlic powder
  • ½ tsp onion powder
  • Salt and pepper to taste
  • Optional: chopped parsley or bacon bits

Method
 

  1. Preheat your oven or air fryer: Set your oven to 400°F or heat your air fryer to 375°F.
  2. Prepare the cauliflower rice: Steam the riced cauliflower until soft then cool it. Once cooled, squeeze out any remaining moisture using a towel.
  3. Combine the ingredients: In a large bowl, mix together the cauliflower, cheddar, Parmesan, almond flour, egg, garlic powder, onion powder, salt, and pepper. Knead well until a dough-like consistency forms.
  4. Shape into potato-like nuggets: Using your hands, scoop small portions of the mixture and roll them into irregularly shaped nuggets.
  5. Bake or air fry the nuggets: Arrange the nuggets on a parchment-lined pan or in the air fryer basket. Bake for 20-25 minutes or air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
  6. Let rest and serve: Allow them to cool for 5 minutes before serving warm with your favourite low-carb dip.

Notes

  • Be certain to squeeze out all the cauliflower moisture—this adds to the crispiness.
  • Feel free to add herbs or spices like paprika or Italian seasoning for extra flavor.
  • Spray with avocado oil before cooking for an extra crunchy exterior.
  • Space the nuggets apart on the pan or in the basket so they cook evenly.
  • Make extras ahead of time to freeze for a quick future snack.
