Preheat your oven or air fryer: Set your oven to 400°F or heat your air fryer to 375°F.
Prepare the cauliflower rice: Steam the riced cauliflower until soft then cool it. Once cooled, squeeze out any remaining moisture using a towel.
Combine the ingredients: In a large bowl, mix together the cauliflower, cheddar, Parmesan, almond flour, egg, garlic powder, onion powder, salt, and pepper. Knead well until a dough-like consistency forms.
Shape into potato-like nuggets: Using your hands, scoop small portions of the mixture and roll them into irregularly shaped nuggets.
Bake or air fry the nuggets: Arrange the nuggets on a parchment-lined pan or in the air fryer basket. Bake for 20-25 minutes or air fry for 10-12 minutes, flipping halfway through, until golden brown and crispy.
Let rest and serve: Allow them to cool for 5 minutes before serving warm with your favourite low-carb dip.
