Sauté the Aromatics: Place large pot over medium heat, and add olive oil. Stir in diced onion and garlic, and sauté until fragrant and soft (approx 2-3 minutes).
Cook the Ground Beef: Stir in ground beef, breaking it up with a spoon. Cook until browned and cooked throughout. Drain excess fat if needed.
Add Tomatoes and Seasoning: Add the can of diced tomatoes with green chilies, taco seasoning, salt, and pepper. Mix well to coat the meat.
Pour in Broth and Simmer: Stir in beef broth and bring to a boil; then reduce heat and simmer 10 minutes to blend flavours.
Add Cream and Cheese: Add additional heavy cream and softened cream cheese. Stir until cheese is completely melted and soup is creamy and smooth.
Let Rest and Serve: Remove from heat and let sit for 5 minutes, then ladle into bowls. Top with your favourite toppings and enjoy while hot.
Preparation Tips: If you like things spicy, you can add a chopped jalapeño or pinch of cayenne pepper.
