Ingredients
  

  • 1 lb ground beef (or ground turkey)
  • 2 tbsp olive oil or butter
  • ½ medium onion, diced
  • 2 garlic cloves, minced
  • 1 (10 oz) can diced tomatoes with green chilies
  • 2 cups beef broth (low-sodium)
  • ½ cup heavy cream
  • 4 oz cream cheese (softened)
  • 2 tbps taco seasoning (sugar-free)
  • ½ tsp salt (adjust to taste)
  • ½ tsp black pepper
  • avocado, shredded cheese, sour cream, jalapeños, cilantro

  • 1 Wooden spoon or spatula

Method
 

  1. Sauté the Aromatics: Place large pot over medium heat, and add olive oil. Stir in diced onion and garlic, and sauté until fragrant and soft (approx 2-3 minutes).
  2. Cook the Ground Beef: Stir in ground beef, breaking it up with a spoon. Cook until browned and cooked throughout. Drain excess fat if needed.
  3. Add Tomatoes and Seasoning: Add the can of diced tomatoes with green chilies, taco seasoning, salt, and pepper. Mix well to coat the meat.
  4. Pour in Broth and Simmer: Stir in beef broth and bring to a boil; then reduce heat and simmer 10 minutes to blend flavours.
  5. Add Cream and Cheese: Add additional heavy cream and softened cream cheese. Stir until cheese is completely melted and soup is creamy and smooth.
  6. Let Rest and Serve: Remove from heat and let sit for 5 minutes, then ladle into bowls. Top with your favourite toppings and enjoy while hot.
  7. Preparation Tips: If you like things spicy, you can add a chopped jalapeño or pinch of cayenne pepper.

  • Soften cream cheese so it will melt evenly and rapidly.
