Ingredients
  

  • cups shredded mozzarella cheese
  • ¾ cup almond flour
  • 1 egg
  • 1 lb ground beef or turkey
  • 1 tbsp taco seasoning
  • ½ cup sugar-free tomato sauce
  • 1 cup shredded cheddar cheese
  • ¼ cup sour cream
  • ½ cup shredded lettuce
  • ¼ cup diced tomatoes
  • ¼ avocado, sliced
  • Salt and pepper to taste

Equipment

  • 1 Baking Tray Or Pizza Stone
  • 1 Parchment Paper
  • 1 Mixing bowls
  • 1 Non-stick skillet
  • 1 Spatula
  • 1 Pizza cutter

Method
 

  1. Make the crust: Melt mozzarella cheese in a microwave safe bowl. Stir in almond flour and egg; a dough will form. Roll it between parchment paper into a large round pizza shape.
  2. Bake the crust: Preheat oven to 400°F (200°C) and bake crust 8–10 minutes, or until golden.
  3. Cook the meat: In a frying pan, combine the beef and taco seasoning. Cook for 3–4 minutes.
  4. Assemble the pizza: Spread sauce over the crust, add the taco meat and then sprinkle with cheddar cheese.
  5. Bake and finish: Put pizza back in oven for an additional 5–7 minutes, or until cheese is melted. Top with lettuce, tomatoes, avocado and sour cream as you serve.

Notes

  • A firm crust is formed because of pre-shredded mozzarella.
  • You can sub almond flour with coconut flour (will need to adjust moisture).
  • Not overbaking will also keep your base from becoming dry.
  • Feel free to mix in jalapeños or olives for a flavour boost.
  • Keep any remaining sauce in an airtight container for up to 3 days.
