Ingredients
  

  • 4 medium chicken breasts
  • 1 cup spinach (chopped)
  • 1 cup shredded mozzarella cheese
  • ½ cup cream cheese (softened)
  • 2 tbsp grated parmesan
  • 2 garlic cloves (minced)
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper (to taste)

Method
 

  1. Prepare Chicken: Get the chicken breasts and carefully slice a pocket lengthwise, without opening at the ends.
  2. Prepare Filling: In a bowl combine spinach, cream cheese, mozzarella, parmesan and minced garlic until smooth and creamy.
  3. Fill Chicken: Use a spoon to fill in prepared pockets of chicken with mixture; press inside. Pin with toothpicks if necessary.
  4. Season Chicken: Rub the outside with olive oil, paprika, Italian seasoning, salt, and pepper for added flavor.
  5. Bake Chicken: Arrange chicken in an oiled baking dish and bake at 375°F (190°C) for 25–30 minutes or until golden and cooked through.
  6. Rest and Serve: Allow chicken to rest for 5 minutes to retain juices before slicing and serving.

Notes

  • Lightly pound chicken to evenly cook.
  • Do not overstuff or filling will come out.
  • Use parchment paper under chicken for easy cleanup.
  • Add cooked bacon bits for extra crunch.
