Fill Chicken: Use a spoon to fill in prepared pockets of chicken with mixture; press inside. Pin with toothpicks if necessary.
Season Chicken: Rub the outside with olive oil, paprika, Italian seasoning, salt, and pepper for added flavor.
Bake Chicken: Arrange chicken in an oiled baking dish and bake at 375°F (190°C) for 25–30 minutes or until golden and cooked through.
