Ingredients
  

  • 2 cups Fresh Strawberries (Hulled and Chopped)
  • ½ cup Water
  • 2 tbsp Powdered Erythritol (Or To Taste)
  • 1 tbsp Lemon Juice
  • 1 tbsp Unflavoured Gelatin Powder

  • 1 Wooden Spoon Or Silicone Spatula
  • 1 Measuring cups and spoons
  • 1 Blender or Masher
  • 1 Fine Mesh Strainer (Optional)
  • 1 Glass Jars Or Airtight Container

Method
 

  1. Prepare the Strawberries: Wash and hull the strawberries. Chop them into halves or quarters as needed.
  2. Cook the Berries: In a saucepan, add strawberries, water, and lemon juice. Cook on medium heat for 5–7 minutes.
  3. Mash and Sweeten: Mash the softened strawberries. Add erythritol and mix well while cooking for another 2 minutes.
  4. Add Gelatin: Sprinkle gelatin over the hot mixture and stir continuously until it fully dissolves.
  5. Strain (Optional): Strain the mixture using a fine mesh if you prefer smooth jelly without seeds.
  6. Set the Jelly: Pour into glass jars or containers. Let it cool, then refrigerate for at least 4 hours.
  7. Serve or Store: Once set, enjoy your jelly or store it in the fridge for up to one week.

Notes

  • Use ripe strawberries for best flavor and natural sweetness.
  • Adjust sweetener to match your taste preference.
  • For a thicker jelly, increase gelatin slightly.
  • Add a few mint leaves while cooking for a fresh twist.
  • Store in sterilized jars to extend shelf life.
