Ingredients
  

  • 2 cups Fresh Or Frozen Strawberries (Halved)
  • 2 tbsp Chia Seeds
  • 2 tbsp Powdered Erythritol (Or Monk Fruit Sweetener)
  • 1 tsp Lemon Juice
  • ¼ cup Water (Optional For Thinner Consistency)

Method
 

  1. Prepare the Strawberries: Wash, hull, and halve the strawberries. Use fresh or frozen berries based on availability.
  2. Cook the Strawberries: Add strawberries and water to a saucepan. Cook over medium heat for 8–10 minutes.
  3. Mash the Mixture: Use a masher or spoon to break down the berries into your desired jam consistency.
  4. Sweeten the Jam: Add erythritol and lemon juice. Stir to dissolve the sweetener fully into the hot mixture.
  5. Add Chia Seeds: Turn off the heat. Stir in chia seeds and let the mixture cool slightly on the stove.
  6. Rest and Thicken: Let the jam sit for 30 minutes. Chia seeds will naturally thicken the jam during this time.
  7. Store the Jam: Transfer the cooled jam to a clean, airtight glass jar. Refrigerate and use within 10 days.

Notes

  • Use ripe strawberries for the best flavor and sweetness without added sugar.
  • Adjust sweetness to taste by increasing or decreasing erythritol.
  • For a smoother texture, blend the jam after thickening.
  • Add a pinch of vanilla for extra depth in flavour.
  • Freeze leftovers in small portions if not using within a week.
