Ingredients
  

  • 1 cup Fresh Strawberries (Sliced)
  • ½ cup Heavy Whipping Cream
  • 2 oz Cream Cheese (Softened)
  • 1 tbsp Powdered Erythritol (To Taste)
  • ½ tbsp Vanilla Extract
  • Optional: Mint Leaves or a few chopped nuts for garnish

Method
 

  1. Prepare Strawberries:Wash and slice the strawberries. Set aside a few for topping.
  2. Whip the Cream:In a cold mixing bowl, whip the heavy cream until soft peaks form.
  3. Cream the Base:In another bowl, mix softened cream cheese, erythritol, and vanilla extract until smooth.
  4. Combine:Fold the whipped cream into the cream cheese mixture gently until well combined.
  5. Add Strawberries:Fold in most of the strawberries, reserving some for garnish.
  6. Chill:Spoon the mixture into serving glasses or jars. Chill for at least 20 minutes.
  7. Serve:Top with remaining strawberries and optional mint or nuts. Enjoy!

Notes

  • Use chilled utensils to whip cream faster.
  • Adjust sweetness to your preference using keto-friendly sweeteners.
  • Add a spoonful of almond butter or crushed nuts for texture.
  • You can also freeze the dessert for a firmer, ice-cream-like consistency.
