Ingredients
  

  • 1 cup unsweetened coconut milk
  • ½ cup fresh or frozen strawberries
  • 2 tbsp unsweetened shredded coconut
  • 1 tbsp chia seeds (optional for fiber boost)
  • ½ tsp vanilla extract
  • Stevia or monk fruit sweetener to taste
  • Ice cubes as needed

  • 1 Serving glasses

Method
 

  1. Prep Ingredients: Clean and hull strawberries, measure the coconut milk, and have all other ingredients ready to easily blend.
  2. Combine in Blender: Add the strawberries, unsweetened coconut milk, shredded coconut, vanilla and sweetener of choice to blender.
  3. Include Ice: Add a few ice cubes to make the smoothie cold, thick, and refreshing.
  4. Optional Boost: If you like extra fibre or protein add chia seeds, collagen, or a scoop of protein powder.
  5. Blend Smoothly: Blend everything on high until completely smooth, foamy and lump-free.
  6. Taste and Adjust: Taste for sweetness and consistency, add more sweetener or milk if necessary.
  7. Serve Chilled: Pour the smoothie into a cold glass, and top with shredded coconut or a slice of strawberry.

Notes

  • If you like your smoothie to be a little on the thicker, creamier side, then use frozen strawberries.
  • Adjust sweetness according to your personal taste and carb allowance.
  • Top it off with MCT oil or collagen powder for added keto perks.
  • Pre chill your serving glasses for an extra crisp sensation.
