  • ½ cup Unsalted Butter (Softened)
  • ¼ cup Powdered Erythritol (Or Preferred Keto Sweetener)
  • 1 tsp Vanilla Extract
  • ¼ tsp Salt

Method
 

  1. Preheat the Oven: Preheat your oven to 325°F (163°C) and line a baking sheet with parchment paper.
  2. Cream the Butter and Sweetener: In a large bowl, cream together the softened butter and powdered erythritol until light and fluffy.
  3. Add Vanilla and Salt: Add vanilla extract and salt to the mixture and blend well for even flavor distribution.
  4. Mix in the Almond Flour: Gradually add almond flour while mixing continuously until a soft dough forms.
  5. Shape the Cookies: Scoop out dough portions and shape them into small discs or roll into balls, flatten gently.
  6. Arrange on Baking Sheet: Place cookies on the prepared baking sheet, spacing them about 1 inch apart.
  7. Bake the Cookies: Bake in the preheated oven for 12-15 minutes until edges turn golden and crisp.
  8. Cool the Cookies: Remove from oven and allow cookies to cool on the baking sheet for 10 minutes.
  9. Transfer to Cooling Rack: Carefully transfer cookies to a wire rack and let them cool completely before serving.
