Ingredients

  • 2 salmon fillets (about 6 oz each)
  • 3 tbsp olive oil
  • 2 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp Dijon mustard (sugar-free)
  • 1 tsp dried oregano
  • 1 tsp paprika
  • 1 tbsp fresh parsley, chopped
  • Salt and black pepper to taste

Equipment

  • 1 Mixing Bowl
  • 1 Whisk or spoon
  • 1 Zip-lock bag or airtight container
  • 1 Baking sheet or grill pan
  • 1 Knife and chopping board

Method

  1. Prepare the Marinade: In a medium size bowl, combine olive oil, lemon juice, minced garlic, Dijon mustard, oregano, paprika, parsley and the salt and pepper mixture and whisk well until blended.
  2. Marinate the Salmon: Add salmon fillets to a zip lock bag or a shallow container. Drizzle the marinade over the fish, so that all pieces get an even coating. Seal and place in the refrigerator for 20 to 30 minutes so the flavors can absorb.
  3. Preheat and Cook: Preheat the oven or grill to 375°F (190°C). Place salmon on a lined baking sheet or grill pan. Cook for 12–15 minutes, or until the salmon flakes easily with a fork.
  4. Serve and Garnish: Turn off the heat and transfer to the dish right away. Top with fresh parsley and lemon wedges to get another kick of flavor and serve hot.

Notes

  • Do not let salmon marinate for longer than 30–40 minutes or it will turn the meat to mush.
  • Opt for fresh lemon juice instead of bottled for a zippier taste.
  • Always pat salmon dry before marinating, without this step the flavours won’t be absorbed as well.
  • Grill for a smoky touch or bake for easy cleanup.
