Prepare the Marinade: In a medium size bowl, combine olive oil, lemon juice, minced garlic, Dijon mustard, oregano, paprika, parsley and the salt and pepper mixture and whisk well until blended.
Marinate the Salmon: Add salmon fillets to a zip lock bag or a shallow container. Drizzle the marinade over the fish, so that all pieces get an even coating. Seal and place in the refrigerator for 20 to 30 minutes so the flavors can absorb.
Preheat and Cook: Preheat the oven or grill to 375°F (190°C). Place salmon on a lined baking sheet or grill pan. Cook for 12–15 minutes, or until the salmon flakes easily with a fork.
Serve and Garnish: Turn off the heat and transfer to the dish right away. Top with fresh parsley and lemon wedges to get another kick of flavor and serve hot.
