Ingredients
  

  • 1 cup almond flour
  • ¼ cup coconut flour
  • ½ cup pumpkin puree
  • cup erythritol or monk fruit sweetener
  • 1 large egg
  • ¼ cup melted butter or coconut oil
  • 1 tsp vanilla extract
  • 1 tsp pumpkin spice
  • ½ tsp cinnamon
  • ½ tsp baking powder
  • Pinch of salt
  • ½ cup sugar-free chocolate chips

Method
 

  1. Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
  2. Mix Wet Ingredients: In large mixing bowl whisk together pumpkin puree, melted butter, egg, sweetener and vanilla until smooth.
  3. Combine Dry Ingredients: Combining almond flour, coconut flour, baking powder, spices, and salt in another bowl.
  4. Make the Dough: Stir in the dry ingredients and mix until a soft dough forms. Fold in the chocolate chips.
  5. Portion the Cookies: Spoon tablespoon portions on to the baking sheet and gently press down each one.
  6. Bake: Bake for 12 – 15 minutes or until the edges are golden and centers are set.
  7. Cool and Enjoy: Remove the cookies from the tray and cool on a wire rack for 10 minutes before serving.

Notes

  • Be sure to grab unsweetened pumpkin puree — not pumpkin pie filling!
  • If the dough is too sticky, chill the dough for 15–20 minutes.
  • Taste-test and adjust your spices (more cinnamon, nutmeg if you want more)
  • Keep in an air tight container for 5 days, or can be put into the freezer up to a month.
  • Chopped walnuts or pecans for crunch and flavor.
