Preheat the Oven: Preheat your oven to 350°F (175°C) and prepare a baking sheet with parchment paper.
Mix Wet Ingredients: In large mixing bowl whisk together pumpkin puree, melted butter, egg, sweetener and vanilla until smooth.
Combine Dry Ingredients: Combining almond flour, coconut flour, baking powder, spices, and salt in another bowl.
Make the Dough: Stir in the dry ingredients and mix until a soft dough forms. Fold in the chocolate chips.
Portion the Cookies: Spoon tablespoon portions on to the baking sheet and gently press down each one.
Bake: Bake for 12 – 15 minutes or until the edges are golden and centers are set.
Cool and Enjoy: Remove the cookies from the tray and cool on a wire rack for 10 minutes before serving.
