Ingredients
  

  • ½ cup unsweetened almond milk (or coconut milk)
  • ¼ cup pecans (roasted for best flavor)
  • 2 tbsp heavy cream (or coconut cream for dairy-free)
  • 1 tbsp sugar-free sweetener (erythritol/monk fruit)
  • ½ tsp vanilla extract
  • ½ tsp cinnamon
  • 5 ice cubes

Method
 

  1. Pecans: Begin by placing your roasted pecans into a blender. Pulse them to grind them down into fine pieces and release their nutty flavour.
  2. Milk & Cream: Add unsweetened almond milk and heavy cream (or coconut cream). This gives it some creaminess and good fats that make the smoothie filling.
  3. Sweetener: Put a sugar-free sweetener of your choice like erythritol or monk fruit. This whole endeavour ensures that the smoothie is keto-friendly — yet with a dessert’s worth of sweet flavour.
  4. Flavourings: Add vanilla and cinnamon. These ingredients replicate the warm, comforting flavour of pecan pie in each sip.
  5. Ice Cubes: Throw in some ice cubes for that cool refreshing fee
  6. Blend: Pulse in a high-speed blender until smooth and creamy.
  7. Serve: Fill up a glass add some crushed pecans (if desire) and enjoy!

Notes

  • Lightly roast the pecans to make them taste richer, more pie-like.
  • For a more of refreshing smoothie instead use cooled almond milk.
  • And a dash of nutmeg for some more spice complexity.
  • You can add additional ice or a tablespoon of chia seeds if you prefer it to be thicker.
  • Trim with crushed pecans on the top to make it a look like dessert.
