Ingredients
  

  • ½ cup almond flour
  • 2 tbsp coconut flour
  • 1 tsp baking powder
  • 2 large eggs
  • 2 tbsp natural unsweetened peanut butter
  • 2 tbsp melted butter or coconut oil
  • ¼ cup unsweetened almond milk
  • 1 tsp vanilla extract
  • 2 tbsp erythritol or keto sweetener
  • Pinch of salt

  • 1 Mixing Bowl
  • 1 Whisk or Electric Mixer
  • 1 Measuring Cups & Spoons
  • 1 Silicone Spatula

Method
 

  1. Preheat the waffle maker: Turn on your waffle maker to medium heat, brushing it lightly with butter or coconut oil.
  2. Mix the dry ingredients: In a mixing bowl, combine the almond flour, coconut flour, baking powder sweetener and salt.
  3. Combine the wet ingredients: Mix the beaten eggs with peanut butter, melted butter, unsweetened almond milk and vanilla extract until combined in another bowl.
  4. Make the batter: Add the wet mixture to the dry and stir until combined Batter should be thick but pourable.
  5. Cook the waffles: It is also time to cook the waffles: pour some batter in a preheated waffle maker, close it and cook for about 3-4 minutes until golden brown.
  6. Serve: Allow the waffles to rest for 1-2 minutes before serving. Cool for 1 minute and serve with sugar-free syrup or a little whipped cream, or fresh strawberries.

Notes

  • Add creamy peanut butter for a more luxurious texture.
  • Feel free to mix in some sugar-free chocolate chips or chopped nuts if you need a little crunch.
  • Over- mixing the batter will invariably make your waffles less fluffy.
  • Leftovers can be stored in an airtight container for 3 days.
  • Place in toaster or oven to reheat and make crispy again.
