Ingredients

  • 1 cup natural peanut butter (unsweetened, smooth or crunchy)
  • ½ cup almond flour
  • 2 tbsp powdered erythritol or monk fruit sweetener
  • 1 tsp vanilla extract
  • Pinch of salt
  • 2 tbsp sugar-free chocolate chips (optional, for coating)
  • 1 tsp coconut oil (if melting chocolate)

Equipment

  • 1 Mixing Bowl
  • 1 Silicone spatula or spoon
  • 1 Measuring Spoons and Cups
  • 1 Baking sheet or plate
  • 1 Parchment Paper
  • 1 Fridge or freezer for chilling

Method

  1. Mix the Base: In a bowl, combine peanut butter, almond flour, sweetener, vanilla extract, and a pinch of salt.Mix it until everything blends into a thick, dough-like mixture.
  2. Form the Balls: Scoop out small amounts of the mixture and roll into 1-inch balls using your hands. Place them on a parchment-lined plate or tray.
  3. Optional Chocolate Coating: If using chocolate, melt sugar-free chocolate chips with coconut oil in the microwave or over a double boiler. Dip or drizzle the balls with chocolate.
  4. Chill to Set: Refrigerate the peanut butter balls for 15 minutes (or freeze for 10) to firm them up before serving.
  5. Serve or Store: Enjoy immediately or store in an airtight container in the fridge for up to a week.

Notes

  • Use almond butter or sunflower seed butter for a peanut-free version.
  • Add shredded coconut, chia seeds, or flaxseed for extra texture.
  • Adjust the sweetener to your taste — start small and increase gradually.
  • If the dough feels too soft, add a little more almond flour.
  • Keep them chilled if the weather is warm to prevent melting.
