Ingredients
  

  • 1 cup Almond Flour
  • ½ cup Unsweetened Shredded Coconut
  • ¼ cup Golden Flaxseed Meal
  • ½ cup Erythritol (or preferred keto sweetener)
  • 1 tsp Baking Powder
  • 1 tsp Ground Cinnamon
  • ¼ tsp Sea Salt
  • 1 large Egg
  • ½ cup Unsalted Butter, Melted
  • 1 tsp Vanilla Extract
  • 2 tbsp Chopped Nuts Or Sugar-Free Chocolate Chips (Optional)

Method
 

  1. Preheat the Oven: Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. Mix the Dry Ingredients: In a large bowl, combine almond flour, shredded coconut, flaxseed meal, baking powder, cinnamon, and salt.
  3. Whisk the Wet Ingredients: In another bowl, whisk together the melted butter, egg, and vanilla extract until smooth.
  4. Combine the Mixtures: Pour the wet ingredients into the dry ingredients. Mix well until a sticky dough forms.
  5. Add Optional Ingredients: Fold in chopped nuts or sugar-free chocolate chips if desired for extra flavor and texture.
  6. Shape the Cookies: Scoop tablespoon-sized portions of dough onto the prepared baking sheet. Flatten them slightly.
  7. Bake the Cookies: Bake for 12-15 minutes or until the edges turn golden brown and crisp.
  8. Cool and Rest: Remove cookies from the oven. Let them rest on the baking sheet for 5 minutes. Transfer them to a cooling rack to cool completely for about 5 more minutes.

Notes

  • Use golden flaxseed meal for a better texture and nutty flavor.
  • Adjust sweetness by adding more or less keto sweetener to taste.
  • Do not overbake. Cookies will continue to firm up while cooling.
