Prepare Wet Mix: Mix softened butter and sweetener together until light and fluffy, then blend in egg and vanilla extract.
Whisk Dry Ingredients: In a separate bowl, whisk almond flour, coconut flour, baking powder and salt until well combined.
Form Dough: Gradually stir the dry mix into wet ingredients (mixture will be soft).
Divide Dough: Divide the dough into three parts for chocolate, vanilla, and strawberry.
Flavour Each Portion: To one add cocoa, another the dry strawberry powder and leave the third plain.
Layer Dough: Stack portions of dough in layers by flouring each, and then patting down into rounds directly on parchment.
Chill and Slice: Refrigerate for 10 minutes, then slice into tidy cookie squares or rectangles.
Bake Cookies: Bake in a preheated 350°F (175°C) oven for 12–15 minutes or until lightly golden. Cool before serving.
