Ingredients
  

  • 2 cups almond flour
  • 2 tbsp coconut flour
  • ½ cup unsalted butter (softened)
  • ½ cup powdered erythritol or monk fruit sweetener
  • 1 large egg
  • 1 tsp vanilla extract
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp freeze-dried strawberry powder
  • ½ tsp baking powder
  • Pinch of salt

Method
 

  1. Prepare Wet Mix: Mix softened butter and sweetener together until light and fluffy, then blend in egg and vanilla extract.
  2. Whisk Dry Ingredients: In a separate bowl, whisk almond flour, coconut flour, baking powder and salt until well combined.
  3. Form Dough: Gradually stir the dry mix into wet ingredients (mixture will be soft).
  4. Divide Dough: Divide the dough into three parts for chocolate, vanilla, and strawberry.
  5. Flavour Each Portion: To one add cocoa, another the dry strawberry powder and leave the third plain.
  6. Layer Dough: Stack portions of dough in layers by flouring each, and then patting down into rounds directly on parchment.
  7. Chill and Slice: Refrigerate for 10 minutes, then slice into tidy cookie squares or rectangles.
  8. Bake Cookies: Bake in a preheated 350°F (175°C) oven for 12–15 minutes or until lightly golden. Cool before serving.

Notes

  • Allow dough to chill for easier slicing and neater layers.
  • With a sharp knife, neatly cut cookie pieces.
  • Don’t overbake because, almond flour cookies will set up as they cool.
  • Wanna ramp up the strawberry flavor of this simple syrup? Add a drop or two of natural extract.
  • Transfer to an airtight container, where they’ll keep for up to 5 days.
