Ingredients
  

  • 1 lb ground beef
  • ½ cup almond flour
  • 1 large egg
  • ¼ cup grated parmesan cheese
  • ¼ cup onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp sugar-free ketchup
  • 1 tbsp olive oil
  • 1 tsp salt
  • ½ tsp black pepper
  • ½ tsp paprika
  • ½ tsp dried oregano

Equipment

  • 1 Mixing Measuring cups and spoons
  • 1 Muffin tin
  • 1 bowl
  • 1 Spatula
  • 1 Oven

Method
 

  1. Preheat oven: Preheat the oven to 375°F (190°C) and either grease your muffin tin with olive oil to avoid sticking.
  2. Prepare the mixture: In a large mixing bowl, combine ground beef, almond flour, egg, parmesan cheese, onion, garlic, and seasonings. Mix gently to avoid tough muffins.
  3. Fill the muffin tin: using a spoon evenly divide the mixture between the muffin tins and press down lightly so they take form but not too firm.
  4. Add the toppings: Brush a little sugar-free ketchup over each muffin for flavor and moisture.
  5. Bake the muffins: Slide into the oven and bake for 20–25 minutes, until the tops are golden and the centers register 160°F.
  6. Rest and serve: Let the muffins rest for 5 minutes before removing and serving.

Notes

  • Try not to over-mix the meat to ensure that muffins are tender.
  • Test for doneness with a meat thermometer (internal temperature should be 160°F internal temperature).
  • Toss some grated cheese in there for flavour.
  • Replace beef with ground turkey for a lighter alternative.
  • Line muffin tins with paper liners (I use parchment) for easy release.
