Ingredients
  

  • 2 cups almond flour
  • ½ cup erythritol (or preferred keto sweetener)
  • 1 large egg
  • ½ cup butter, softened
  • 1 tsp vanilla extract
  • 1 tsp maple extract (sugar-free)
  • 3 tbsp sugar-free maple syrup
  • ½ tsp baking powder
  • Pinch of salt
  • 6 strips crispy bacon, chopped

Method
 

  1. Preheat Oven: If the oven temperature is ready, preheat your oven to 350°F (175°C) and cover your baking trays with parchment pagers to avoid sticking.
  2. Mix Wet Ingredients: In a mixing bowl, beat softened butter, egg, vanilla extract, and sugar-free maple extract until smooth and creamy.
  3. Mix Dry Ingredients: In a separate bowl combine the almond flour, erythritol, baking powder and a pinch of salt. Add gradually to the wet mixture while mixing, until you get a soft dough.
  4. Stir in Bacon: Stir crispy bacon into the dough until it’s spread throughout.
  5. Shape Cookies: Place small balls of dough on the tray and press down lightly with fingers or spatula to even for baking.
  6. Bake: Place in the oven and bake for 12–15 minutes, until the edges turn golden brown.
  7. Cool and Serve: Allow cookies to cool on a wire cooling rack for 10 minutes before serving.

Notes

  • The dough will be easier to handle with butter that’s at room temperature.
  • Do not over-mix, or the cookies can become dense.
  • For additional crunch, toss in more bacon.
  • Keep in a well-sealed container to retain freshness.
  • For chewier cookies, underbake slightly.
