Preheat Oven: If the oven temperature is ready, preheat your oven to 350°F (175°C) and cover your baking trays with parchment pagers to avoid sticking.
Mix Wet Ingredients: In a mixing bowl, beat softened butter, egg, vanilla extract, and sugar-free maple extract until smooth and creamy.
Mix Dry Ingredients: In a separate bowl combine the almond flour, erythritol, baking powder and a pinch of salt. Add gradually to the wet mixture while mixing, until you get a soft dough.
Stir in Bacon: Stir crispy bacon into the dough until it’s spread throughout.
Shape Cookies: Place small balls of dough on the tray and press down lightly with fingers or spatula to even for baking.
Bake: Place in the oven and bake for 12–15 minutes, until the edges turn golden brown.
Cool and Serve: Allow cookies to cool on a wire cooling rack for 10 minutes before serving.
