Ingredients
  

  • ½ cup coconut milk (unsweetened, full-fat)
  • 2 tbsp cream cheese (softened)
  • 2 tbsp lime juice (freshly squeezed)
  • 1 tsp lime zest
  • ½ avocado (for creaminess, optional)
  • 3 tbsp erythritol or monk fruit sweetener (adjust to taste)
  • ½ cup crushed ice
  • 1 tbsp almond flour or crushed pecans (for pie-crust effect, optional)
  • A few drops vanilla extract

Method
 

  1. Prepare Base: Place unsweetened coconut milk, softened cream cheese, fresh lime juice, zest, sweetener and Vanilla extract into a blender to begin. These are the ingredients that make up the creamy, tangy base of this smoothie.
  2. Add Avocado (Optional): To add extra density and nutrients to your smoothie, put half of an avocado. It adds protein to the smoothie and also makes it more filling, without pushing it out of ketosis.
  3. Add Ice: Then add crushed ice for that cool and ice-cold feeling.
  4. Blend until Smooth: Puree on high until the mixture is smooth, frothy, and devoid of lumps.
  5. Adjust Taste: sweet to sour by adding more sweetener or lime juice as necessary.
  6. Pour & Garnish: Pour into glasses, dust with almond flour or crushed nuts for a pie-crust vibe, and top with lime slice.
  7. Serving Fresh: For best flavour, eat immediately.

Notes

  • For added creaminess, chill the coconut milk before blending.
  • The best flavour will come from fresh squeezed lime juice.
  • Stir in some collagen or protein powder for a bit more substance.
  • Top with a lime slice for a nice refreshing garnish.
  • If you like it thicker, throw in more avocado or cream cheese.
