Ingredients
  

For the Cookies:
  • cups almond flour
  • cup erythritol or preferred keto sweetener
  • ¼ cup butter (softened)
  • 1 egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • cocoa powder (for chocolate version)
For the Ice Cream Filling:
  • 1 cup powdered erythritol
  • ¼ cup heavy cream (or coconut cream for dairy-free)
  • ½ tsp vanilla extract
  • keto chocolate chips, berries, or flavoring extracts

Method
 

  1. Make the Cookie Dough: In a large bowl, beat the softened butter and sweetener together until smooth. Stir in egg and vanilla extract and combine.
  2. Add Dry Ingredients: Rub in almond flour, baking powder and salt until a soft dough is formed. Include cocoa powder if making chocolate cookies.
  3. Shape and Bake: Preheat oven to 350°F (175°C). Drop dough by rounded tablespoonfuls onto a parchment-lined baking sheet and flatten into a disk. ).Bake for 10-12 minutes or until golden on the edges. Let them cool completely.
  4. Prepare the Ice Cream: As cookies cool, beat heavy cream, powdered sweetener, and vanilla extract until firm and fluffy. Freeze for 30–40 minutes, or until it is no longer soft but not rock solid either.
  5. Assemble the Sandwiches: Place a spoonful of ice cream on one cookie and gently press another cookie on top. Repeat for all.
  6. Freeze Before Serving: Transfer the sandwiches to a freezer-safe container and freeze for at least 30 minutes, to firm up. Serve chilled.

Notes

  • Allow the cookies to cool completely before assembling so they don't melt.
  • For uniformity in sizing, use a cookie scoop.
  • For softer sandwiches, let them sit out for 5 minutes before eating.
  • Keep any leftovers wrapped in parchment paper in your freezer.
