Ingredients
  

  • 2 salmon fillets (150–200g each)
  • 2 tbsp mustard (Dijon or yellow)
  • 1 tbsp keto-friendly sweetener (like erythritol or monk fruit)
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • Salt and pepper, to taste
  • Lemon wedges, for garnish

Method
 

  1. Preheat Oven: The first step is to preheat your oven to 400°F . This will help you cook the salmon evenly while ensuring the glaze caramelizes to perfection.
  2. Prepare Glaze: In a bowl, combine 2 tablespoons mustard, 1 tablespoon keto-approved sweetener, 1 tablespoon olive oil, 1 teaspoon garlic powder, and a pinch of salt and pepper. Whisk the ingredients together until well combined and smooth.
  3. Pat Salmon Dry: Pat the salmon fillets dry with a paper towel. This will help the glaze stick to the fillet and ensure that the salmon cooks nicely and evenly.
  4. Apply Glaze: Using a pastry brush, brush anything on the top of each fillet. Do this generously to ensure the fillets are completely covered in mustard mixture.
  5. Bake Salmon: Place the salmon on a lined baking sheet and bake for 12–15 minutes until it flakes easily with a fork and reaches 145°F (63°C).
  6. Rest & Serve: Let the salmon rest 5 minutes, then serve with lemon wedges for a fresh, tangy finish.
