Ingredients
  

  • 1 lb (450g) ground beef
  • 2 cups cauliflower rice
  • 1 medium onion, chopped
  • 2 garic cloves, minced
  • 1 cup heavy cream
  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese
  • 2 tbsp olive oil or butter
  • 2 tsp paprika
  • 1 tsp Italian seasoning
  • Salt and pepper to taste

Method
 

  1. Cook the Beef: In a medium skillet over medium heat, heat the olive oil. Throw two, three, minced clove of garlic with a chopped onion in the pan, and brown some ground beef. Cover and cook until the meat browns and is no longer pink.
  2. Mix the Base: Stir in cauliflower rice, cream cheese, and heavy cream. Simmer for a few minutes until everything comes together as a creamy concoction.
  3. Season: Add paprika, Italian seasoning, salt, and pepper to taste. Add flavours to taste, combining until flavours are well mixed.
  4. Assemble Casserole: Transfer the beef mixture into a baking dish. Spread evenly and top with shredded cheddar cheese for a golden crust.
  5. Bake & Finish: Place in preheated oven at 375°F (190°C) for 20 minutes or until cheese is bubbly. Allow to rest for 5 minutes before serving hot.

Notes

  • For convenience, use pre-riced cauliflower.
  • Use mozzarella or gouda instead of cheddar for a variation in flavour.
  • Toss in some spinach, zucchini or mushrooms for added nutrients.
  • For those who like a little heat, throw in some jalapeños or chilli flakes.
  • Prepare them ahead and freeze for weeknights.
