Prepare the Vegetables: Rinse and cut up all of the vegetables to be of an even size which will prepare them for grilling.
Season the Veggies: Combine the vegetables with some olive oil, garlic powder, oregano, paprika, salt and pepper in a large bowl.
Preheat the Grill: Preheat either grill or a grill pan over medium-high heat. If necessary, lightly brush with some oil to avoid sticking.
Grill the Vegetables: Lay vegetables on the grill in a flat layer. Char and cook 3–4 minutes per side or until tender.
Rest and Serve: Take the veggies out and then sit them down for 5 minutes Top with fresh herbs at service.
