Get your ingredients ready: If you’re scrambling them, crack 2 large eggs into a small bowl, if you’d like them fried or sunny side up, leave the eggs whole. Mince one garlic clove finely.
Melt Butter: In a non-stick skillet over medium-low heat, melt butter. Stir in 1 tablespoon unsalted butter and cook until it begins to foam.
Fry Garlic: Add the finely minced garlic to the butter. Toss gently, and cook for 30–40 seconds, or until fragrant and golden in colour. Take care not to burn it as it becomes bitter when burnt.
Cook Eggs: Crack the eggs into the pan. For scrambled eggs, whisk away and stir softly. For fried eggs, allow the whites to set while basting the yolks in garlic butter.
Sprinkle with salt and pepper: Top with herbs or cheese if using. Serve hot for maximum flavour.
