Prepare Cauliflower Rice: Grate fresh cauliflower in a food processor by simply pulsing it or use a box grater, or use pre-made cauliflower rice for ease.
Heat Oil: Heat sesame oil and olive oil in a sauce pan or wok, non-stick pan over medium heat until hot and smoking.
Saute Garlic β Add minced garlic and stir for 30 seconds to release its aroma.
Cook Veggies: Add your diced low-carb veggies and stir-fry about 3β4 minutes until they are soft but still have a bite.
Scramble Eggs: Push veggies to one side of the pan, add beaten eggs and scramble.
Add Cauliflower Rice: Mix in cauliflower rice, soy sauce (or coconut aminos), salt, and pepper, then stir-fry for 5β6 minutes.
Mix & Serve: Mix everything well, rest for two minutes, garnish with green onions and serve hot!
