Ingredients
  

  • 2 cups cauliflower rice
  • 2 egg lightly beaten
  • 1 tbsp sesame oil
  • 1 tbsp olive oil or butter
  • 1 cup mixed low-carb veggies (zucchini, bell pepper, spinach, etc.)
  • 2 cloves garlic, minced
  • 2 tbsp soy sauce or coconut aminos
  • Salt and pepper, to taste
  • Optional: cooked chicken or shrimp for protein

Equipment

  • 1 Non-stick pan or wok
  • 1 Wooden spatula
  • 1 Knife and chopping board
  • 1 Mixing Bowl

Method
 

  1. Prepare Cauliflower Rice: Grate fresh cauliflower in a food processor by simply pulsing it or use a box grater, or use pre-made cauliflower rice for ease.
  2. Heat Oil: Heat sesame oil and olive oil in a sauce pan or wok, non-stick pan over medium heat until hot and smoking.
  3. Saute Garlic – Add minced garlic and stir for 30 seconds to release its aroma.
  4. Cook Veggies: Add your diced low-carb veggies and stir-fry about 3–4 minutes until they are soft but still have a bite.
  5. Scramble Eggs: Push veggies to one side of the pan, add beaten eggs and scramble.
  6. Add Cauliflower Rice: Mix in cauliflower rice, soy sauce (or coconut aminos), salt, and pepper, then stir-fry for 5–6 minutes.
  7. Mix & Serve: Mix everything well, rest for two minutes, garnish with green onions and serve hot!

Notes

  • For best texture, you will want to use fresh cauliflower.
  • Do not overcook, or the coating may become mushy.
  • Top with protein, such as chicken or shrimp, for a full meal.
  • Go for coconut aminos if you want a soy-free alternative.
  • Top with green onions for taste.
