Ingredients
  

  • 2 cups chicken broth
  • 2 tbsp soy sauce or tamari (for gluten-free)
  • 1 tsp sesame oil
  • 1 clove garlic, minced
  • ½ tsp ground ginger
  • ½ tsp xanthan gum (or glucomannan powder)
  • 2 tbsp water (for mixing thickener)
  • Salt & pepper to taste

  • 1 Small mixing bowl
  • 1 Wooden spoon

Method
 

  1. Prepare the Thickener: Add 1 tsp xanthan gum to for 2 tbsp of water in a small bowl. Mix well to create a smooth slurry.
  2. Heat the Base: In a medium saucepan over medium heat, combine all ingredients. Pour in chicken broth, soy sauce, sesame oil, minced garlic and ground ginger. Bring to a gentle simmer.
  3. Add the Thickener: Drizzle the xanthan gum slurry into the simmering liquid. Keep whisking to avoid getting lumps and does get thickened evenly.
  4. Adjust the Seasoning: Season the gravy with salt or pepper if necessary. Pour a little soy sauce for that extra layer of flavor.
  5. Serve the Gravy: Spoon the whole thing with Hot Gravy over Keto Egg Foo Young, cauliflower rice or toast veggies. Serve immediately for the best texture and flavour.

Notes

  • Stir in the thickener whisking all the time to stop it from getting lumpy.
  • You can add more broth if it is too thick or stir in the xanthan gum slurry until you reach your desired thickness.
  • You can add mushrooms or scallions for extra texture.
  • Reheat on low heat if making ahead to keep the consistency.
