Prepare Cucumber: Wash the cucumber well, peel it and cut into small pieces for easy blending.
Scoop Avocado: Cut the avocado in half, take out the pit and use a spoon to scoop out the silky flesh.
Add Ingredients: In a blender, add chopped cucumber, avocado, unsweetened almond milk, lemon juice, mint leaves,chia seeds and pinch of salt.
Mix Well: Toss in a couple of ice cubes and mix everything together until smooth and free from lumps. Thin with more liquid if you like a soupier texture.
Fresh Serve: Transfer it to serving glasses and a sprig of mint leaves or some chia seeds if desired, drink immediately for best flavour and freshness.
