Ingredients
  

  • 1 medium cucumber (peeled and chopped)
  • 1 ripe avocado
  • 1 cup unsweetened almond milk (or coconut milk)
  • 1 tbsp lemon juice
  • 5-6 fresh mint leaves
  • 1 tsp chia seeds (optional)
  • A pinch of salt
  • Ice cubes (as desired)

  • 1 Serving glasses

Method
 

  1. Prepare Cucumber: Wash the cucumber well, peel it and cut into small pieces for easy blending.
  2. Scoop Avocado: Cut the avocado in half, take out the pit and use a spoon to scoop out the silky flesh.
  3. Add Ingredients: In a blender, add chopped cucumber, avocado, unsweetened almond milk, lemon juice, mint leaves,chia seeds and pinch of salt.
  4. Mix Well: Toss in a couple of ice cubes and mix everything together until smooth and free from lumps. Thin with more liquid if you like a soupier texture.
  5. Fresh Serve: Transfer it to serving glasses and a sprig of mint leaves or some chia seeds if desired, drink immediately for best flavour and freshness.

Notes

  • Use cold cucumber and avocado for a chill hit of freshness.
  • To thicken or thin, add a bit more milk.
  • Toss in a scoop of protein powder that is also keto-friendly.
  • Sprinkle with crunchy hemp seeds or pumpkin seeds.
  • Serve immediately; prevent from being stored for hours as the avocado will turn brownish very fast.
