Ingredients
  

  • 1 cup shredded mozzarella cheese
  • 2 large eggs
  • ½ cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ cup sugar-free pizza sauce
  • ½ cup sliced pepperoni or cooked chicken
  • ¼ cup chopped bell peppers
  • ¼ cup sliced black olives
  • ¼ tsp garlic powder
  • Salt and pepper to taste

  • 1 Oven-safe skillet or baking dish
  • 1 Mixing Bowl
  • 1 Whisk or Fork
  • 1 Measuring cups and spoons
  • 1 Spatula

Method
 

  1. Heat your oven: Preheat your oven to 400°F (200°C).
  2. Make the base: In a bowl, whisk together eggs, mozzarella, Parmesan and Italian seasoning. Add the mixture to dish that will be able to go in the oven.
  3. Bake the base: Bake for 8-10 minutes until just firm to touch and lightly golden.
  4. Top with toppings: Spread pizza sauce over dough and sprinkle the toppings such as pepperoni, bell peppers and olives over the pizza. Serve topped with additional cheese, if desired.
  5. Bake again: Put it back in the oven for another 5 minutes, or until the cheese is melting and bubbly.
  6. Rest and serve: Allow it to rest for 5 minutes before slicing and serving.

Notes

  • Use half mozzarella and half cheddar for added flavor.
  • Precooking vegetables like mushrooms will help to avoid excess moisture.
  • While you are at it, throw in some chili flakes for some spiciness!
  • Just be careful not to over-bake the base as you want it to remain soft and cheesy.
