Soften Cream Cheese: Let the cream cheese set at room temperature for about 15 minutes.
Mix Cream Cheese & Sweetener: Take a Bowl, blend the cream cheese and powdered erythritol until smooth using a hand mixer.
Add Vanilla & Cream: Add vanilla extract and slowly pour in heavy whipping cream while mixing until light and fluffy.
Chill the Mixture: Spoon the mixture into ramekins or a serving dish. Cover and chill in the refrigerator for at least 1 hour.
Add Toppings: Just before serving, top with a few fresh berries, nuts, or a dusting of cocoa powder if desired.
Serve & Enjoy: Serve chilled. Store leftovers in the fridge for up to 3 days.
