Ingredients
  

For the Filling:
  • 1 lb (450g) ground beef
  • 2 small onion, diced
  • 1 cloves garlic, minced
  • 1 cup mushrooms, sliced
  • 1 cup beef broth
  • 1 tbsp tomato paste
  • 1 tsp Worcestershire sauce
  • 1 cup celery, chopped
  • 1 cup zucchini, diced
  • 1 tsp dried thyme
  • Salt and pepper, to taste
  • 2 tbsp olive oil or butter
For the Cauliflower Mash Topping:
  • 1 large head cauliflower, chopped
  • 2 tbsp butter
  • ¼ cup heavy cream
  • Salt and pepper, to taste
  • ½ cup shredded cheddar cheese (optional)

Equipment

  • 1 Large skillet or frying pan
  • 1 Saucepan
  • 1 Potato masher or food processor
  • 1 Baking dish (9x13 inch)
  • 1 Wooden spoon
  • 1 Mixing bowls

Method
 

  1. Prepare the cauliflower mash: Steam or boil cauliflower until cooked. Drain and then mash with your potato masher or blend with the butter, cream, salt and pepper ensuring everything is totally smooth. Set aside.
  2. Cook the beef filling: Heat olive oil or butter in a large skillet. Sauté with onion and garlic. Add beef and cook until browned.
  3. Add vegetables: Add mushrooms, celery and zucchini. Fry for 5 mins until softened.
  4. Make the sauce: Add tomato paste, Worcestershire sauce, beef broth, thyme, salt, and pepper. Simmer for 10 minutes until slightly thickened.
  5. Assemble the pie: Place beef mixture, fresh garlic and cheeze into a baking/serving casserole dish together. Smooth over with the cauliflower mash. If desired add cheddar cheese and cook.
  6. Bake: Preheat oven to 375°F (190°C). Bake for 20 Minutes until the top is golden and bubbly.

Notes

  • Drain cauliflower thoroughly before mashing to avoid watery topping.
  • Add grated parmesan for extra flavor in the mash.
  • You can use ground turkey or chicken instead of beef.
  • For a richer sauce, add a splash of red wine before simmering.
  • Make ahead and refrigerate, then bake when ready to serve.
