Prepare the Batter: In a bowl mix together cottage cheese, eggs, almond flour, baking powder and salt. For a sweet version add vanilla extract and your choice of sweetener. Whisk well with a spoon, or you can also use your hand blender to ensure that no lumps remain in the batter.
Preheat the Waffle Maker: Preheat your waffle maker. To cook them, open the pie iron and lightly grease the plates with melted butter or cooking spray.
Cook the Waffles: Add the waffle to your waffle maker. Close the lid and cook for 4–5 minutes or until waffles turn golden with crispy edges.
Rest and Serve: Wait 1 to 2 minutes, then lift each waffle off the grid. Top with your favorite keto toppings and serve hot.
