Ingredients
  

  • 2 cups almond flour
  • ½ cup unsalted butter (softened)
  • ½ cup keto-friendly sweetener (erythritol/monk fruit)
  • 1 large egg
  • 1 tsp vanilla extract
  • ½ tsp baking powder
  • Pinch of salt
  • ½ cup sugar-free chocolate chips (optional)

Method
 

  1. Preheat Oven: Begin by setting your oven to 350°F (175°C) so that it’ll be ready to go by the time you have the dough ready!
  2. Mix Wet Ingredients: In a large bowl, mix together softened butter, keto sweetener, egg and vanilla until creamy and well-blended.
  3. Add Dry Ingredients: Stir in almond flour, baking powder and a pinch of salt and mix to form a soft dough.
  4. Stir in Chocolate Chips: Mix in sugar free chocolate chips or nuts and fold into the dough for extra flavour.
  5. Shape Cookies: Scoop and roll into balls, set on the cookie sheet lined with parchment, then gently smash the top.
  6. Bake: Place the tray in the oven and bake for 12 minutes or until edges turn golden brown.
  7. Cool: Let cookies chill for 10 minutes to cool down before eating.

Notes

  • For thicker cookies, chill the dough for 15 minutes.
  • Because they do stick, you should use parchment paper.
  • Do not over-bake; they will set up as they cool.
  • If you’d like even more flavour, add some spices, such as cinnamon.
  • Keep in airtight container for 5 days.
