Ingredients
  

  • 1 cup full-fat coconut milk (unsweetened)
  • ½ cup unsweetened shredded coconut
  • 2 tbsp keto-friendly sweetener (erythritol/stevia)
  • ½ tsp vanilla extract
  • ½ cup ice cubes
  • Whipped cream (optional, for topping)

Method
 

  1. Blend your base: Combine full-fat coconut milk, shredded coconut, sweetener, vanilla extract and ice in a blender.
  2. Transfer to a blender: Combine all of the ingredients in a blender or food processor and blend on high speed until it becomes creamy, frothy, and well-blended.
  3. Taste for sweetness: Taste the shake and, if it’s not quite sweet enough to your liking, add a little more sweetener.
  4. Serve immediately: Pour the milkshake into tall serving glasses.
  5. Refrigerate before serving (optional): For a thicker shake, refrigerate the shake for just an additional few minutes before serving.
  6. Serve and enjoy cold: Cool down with this naturally keto friendly treat served as a drink or dessert.

Notes

  • For a creamier finish, use cold coconut milk.
  • Finish it off with a scoop of unsweetened protein powder for a post-workout version.
  • For a chocolaty variation, stir in 1 tbsp (15 ml) unsweetened cocoa powder.
  • Serve topped with toasted coconut flakes to make it crunchy.
