Ingredients
  

  • ½ cup coconut flour
  • 4 large eggs
  • ½ cup unsweetened almond milk
  • 3 tbsp melted butter (or coconut oil)
  • 2 tbsp erythritol or keto sweetener
  • 1 tsp baking powder
  • ½ tsp vanilla extract
  • Pinch of salt

  • 1 Silicone Spatula

Method
 

  1. Preheat the waffle maker: Turn on your waffle maker and lightly grease it with coconut oil or non-stick spray.
  2. Whisk dry ingredients: In a medium bowl, whisk together coconut flour, baking powder, salt and sweetener.
  3. Whisk wet ingredients: In a different bowl, whisk your eggs, almond milk, melted butter and vanilla together.
  4. Combine and rest: Slowly add the wet mixture to the dry mixture, stirring until well combined. Let the batter rest for 2 minutes to thicken.
  5. Cook waffles: Pour batter into your waffle maker, and spread it out. Place the lid on top and cook for around 4 minutes or until golden and crispy.
  6. Serve and enjoy: Remove waffles with a spatula, add your favorite keto toppings, and serve warm.

Notes

  • Be careful not to overmix the batter as this will result in dense waffles.
  • One of the great features is that it allows the coconut flour to absorb some moisture by letting it rest.
  • Add more almond milk if batter is too thick.
  • Add eggs at room temperature for even better mixing
  • If you want it extra crispy, add 1 to 2 more minutes of cooking time.
