Ingredients
  

  • ½ cup coconut cream (unsweetened)
  • 1 cup unsweetened almond milk
  • 1 tbsp chia seeds (optional, for thickness)
  • 1 tsp vanilla extract
  • 3 drops liquid stevia (or keto-friendly sweetener, optional)
  • 4 ice cubes

  • 1 Glass for serving
  • 1 Measuring cups and spoons

Method
 

  1. Assemble Ingredients: So all the ingredients up; coconut cream, almond milk, vanilla extract and sweetener, along with ice cubes. Make sure the can of coconut cream is cold to make for a better creamy texture.
  2. Place in Blender: coconut cream, almond milk, vanilla and sweetener into a blender. Throw in the taste-test ice cubes to thicken and cool down your concoction.
  3. Blend Smoothly: Puree on high for about 30-40 seconds or until the blend looks well combined, smooth, creamy and frothy.
  4. Taste & Adjust: Verify the sugar level and texture. If you like it thicker, add more coconut cream or chia seeds. For more sweetness, sweeten to taste with a few additional drops of keto-approved sweetener.
  5. Serve the Fresh: Once the smoothie is ready, transfer it into a chilled glass, top with some shredded coconut or chia seeds and enjoy your Keto Coconut Cream Smoothie right away.

Notes

  • It’s extra creamy with chilled coconut cream instead.
  • Toss in a—wait for it—scoop of unflavoured protein powder, and you’ve got yourself an absurdly filling breakfast.
  • If you like it thicker, cut back on almond milk or add some avocado.
