Ingredients
  

For the Dough:
  • cups almond flour
  • 2 tbsp coconut flour
  • 2 tbsp cream cheese
  • cups shredded mozzarella
  • 1 large egg
  • 1 tsp baking powder
  • 1 tbsp erythritol or monk fruit sweetener
  • ½ tsp vanilla extract
For the Filling:
  • 2 tbsp butter, melted
  • 2 tbsp erythritol or monk fruit
  • tsp cinnamon
For the Frosting (optional):
  • 2 oz cream cheese
  • 2 tbsp powdered erythritol
  • 1 tbsp heavy cream
  • ½ tsp vanilla extract

Equipment

  • 1 Mixing bowls
  • 1 Whisk
  • 1 Measuring cups and spoons
  • 1 Rolling pin
  • 1 Baking dish or tray
  • 1 Parchment Paper
  • 1 Oven

Method
 

  1. Prepare the Dough: In a bowl, microwave mozzarella and cream cheese until melted. Stir until smooth, then add almond flour, coconut flour, baking powder, egg, vanilla, and sweetener. Mix until a dough forms.
  2. Roll the Dough: Place dough between two parchment sheets and roll into a rectangle using a rolling pin.
  3. Add the Filling: Apply melted butter over the dough. Mix cinnamon and sweetener and then sprinkle it on top.
  4. Roll and Slice: Carefully roll the dough into a log. Slice into 6–8 equal pieces and place them in a greased baking dish.
  5. Bake the Buns: Bake at 180°C (350°F) for 18–20 minutes or until golden brown.
  6. Make the Frosting: Whip together cream cheese, sweetener, vanilla, and heavy cream until smooth. Spread over warm buns if desired.

Notes

  • Use parchment paper to prevent sticking when rolling out dough.
  • Slightly wet your hands to handle sticky dough more easily.
  • Don’t over-bake; they are done once slightly golden on top.
  • Chill the dough if it's too soft to roll.
  • Add chopped pecans for a nutty crunch.
