Ingredients
  

  • 1 cup unsweetened almond milk (or coconut milk)
  • 2 tbsp unsweetened cocoa powder
  • 2 tbsp pistachios (shelled, unsalted)
  • 1 tbsp chia seeds (optional, for thickness)
  • 2 tbsp keto-friendly sweetener (erythritol/monk fruit)
  • 4 ice cubes
  • Whipped cream (optional, for topping)

Method
 

  1. Blend the base: Place unsweetened almond milk, cocoa powder, sweetener and ice cubes into a high speed blender. This will form the base of our creamy chocolate shake.
  2. Add pistachios: First you crack the shelled pistachios into the pot. They add a nutty richness, healthy fats and crunch that offset the cocoa flavor.
  3. Boost with chia seeds (optional): If you prefer a thicker texture and added fiber, include chia seeds at this stage before blending.
  4. Pulse until smooth: Run the processor at high speed and process the everything until well incorporated and it becomes creamy, frothy, soft and smooth in texture.
  5. Serve and garnish: Pour the shake into a chilled glass. Top with sugar-free whipped cream or crushed pistachios for a decorative and flavourful finish. Enjoy your Keto Chocolate Pistachio Shake immediately while it’s cold and refreshing.

Notes

  • For additional coolness, use refrigerated almond or coconut milk.
  • For a richer shake, add 1 spoon of heavy cream.
  • Lightly toast the pistachios before blending them for a richer taste.
  • Sweetness can be adjusted according to your choice.
