Ingredients
  

  • 1 Cup shredded cheddar cheese (or mozzarella, pepper jack, or Mexican blend)

Equipment

  • 1 Baking tray or non-stick skillet
  • 1 Parchment paper or silicone mat
  • 1 Cooling rack or handle of a wooden spoon (to shape the shells)
  • 1 Spatula
  • 1 Grater (if using block cheese)

Method
 

  1. Preheat and Prepare: Start by preheating your oven to 400 degrees (200°C). Line a cookie sheet with parchment paper, or an silicone mat.
  2. Form Cheese Circles: Put about ¼ cup shredded cheese into a circle, roughly 5 inches wide. Keep adding circles of cheese, spaced apart.
  3. Bake Until Golden: Put the tray into the oven and bake for 7-10 minutes, until the cheese is bubbling and slighly browned on edges.
  4. Shape into Shells: Use a spatula to carefully lift each cheese circle and drape over a wooden spoon handle balanced between two cups or cooling rack to create taco shell shape. Allow to cool and set for 5 minutes.
  5. Serve and Fill: It is the best way to enjoy all of your favorite taco toppings (like ground beef, avocado, lettuce, sour cream) while keeping it keto!

Notes

  • WAX paper: Helps your baked goods not stick to the baking sheet
  • Cool cheese completely for extra crispiness, then fill.
  • Get creative with a combination of cheeses for variation in taste and texture.
  • Bake for a few more minutes, based on the cheese thickness and oven heat.
  • Flatten and store extra in fridge, reheat briefly in oven to reform.
