Ingredients
  

  • 1 cups heavy cream
  • 2 tbsp unsalted butter
  • cups shredded cheddar cheese (or mixed cheese blend)
  • 2 tbsp cream cheese
  • ½ tsp garlic powder
  • ½ tsp paprika (optional)
  • Salt & pepper to taste

Method
 

  1. Melt Butter: Start by melting unsalted butter in a medium saucepan over low to medium heat. It creates that flavorful foundation for your sauce.
  2. Add Cream: Slowly pour in heavy cream, whisking continuously to combine with the butter and avoid separation.
  3. Add Cheddar: Whisk in shredded cheddar cheese one handful at a time, stirring it in as it melts so that the texture stays velvety smooth.
  4. Season Well: Add garlic powder, paprika, salt, and pepper and stir to bring flavors to harmony.
  5. Simmer: For about 1-2 minute let the sauce cook on low heat until it becomes thick and glossy.
  6. Serve: Take off heat, let rest for another minute or two, then serve warm on meat, veggies, or keto sides.

Notes

  • The texture will be better if you use freshly shredded cheese (pre-shredded is typically dusted with starch).
  • Be very careful not to allow the sauce to become too hot, or it will separate.
  • If you like things spicy, add some jalapenos or chilli flakes.
  • Keep any remaining dish in the fridge for up to 3 days and gently reheat.
