Ingredients
  

  • 1 cup shredded cheddar cheese
  • ½ cup cream cheese (softened)
  • ½ cup heavy cream
  • 1 tbsp butter
  • ¼ tsp garlic powder
  • ¼ tsp paprika (optional)
  • Salt and pepper to taste
  • Optional: diced jalapeños, cooked ground beef, chopped green onions, bacon bits

  • 1 Serving bowl
  • 1 Cutting board (if adding extras like jalapeños)

Method
 

  1. Heat the Base: Melt the butter in a saucepan over medium heat. Pour in the heavy cream, stirring lightly until warmed through.
  2. Add Cream Cheese: Mix softened cream cheese into the pan until it melts completely in with the creamy mixture.
  3. Stir in Shredded Cheese: Slowly add shredded cheddar cheese, while stirring until melted and creamy.
  4. Season: Stir in garlic powder, paprika (if using), and season to taste with salt and pepper. Stir well to get all the flavours together.
  5. Serve Warm: When dip is thick and creamy, remove from heat. Let it stand for 2 minutes, then transfer to a serving bowl. Garnish with optional toppings.

Notes

  • Use pre-shredded cheese as a time saver (but check it’s low-carb – no added starches).
  • Throw in some diced jalapeños for extra heat, or ground beef to make it a heartier dip.
  • Stir constantly to prevent the dip from separating or scorching.
  • If you want to keep the veggies in their original texture, warm over low heat or microwave on a reheat setting.
  • Add a splash of broth or more cream to thin it out if desired.
