Ingredients
  

  • 8 oz cream cheese, softened
  • 1 cup shredded sharp cheddar cheese
  • ½ cup shredded mozzarella cheese
  • 2 tbsp chopped green onions or chives
  • 1 tsp garlic powder
  • ½ tsp onion powder
  • ¼ tsp paprika
  • Salt & pepper to taste
  • ¼ cup chopped nuts or cooked bacon bits (for coating)
  • Optional: diced jalapeños, olives, or herbs

Equipment

  • 1 Mixing bowls
  • 1 Silicone spatula or spoon
  • 1 Measuring cups and spoons
  • 1 Plastic wrap or parchment paper
  • 1 Baking tray or plate for chilling

Method
 

  1. Mix the Base: In a large bowl, mash together the softened cream cheese with the shredded cheddar and mozzarella. Beat well until well combined and creamy.
  2. Add Seasonings: Add green onions, garlic powder, onion powder, paprika, salt and pepper. Mix in any optional add-ins like jalapeños or olives here.
  3. Shape the Balls: Dip 1-2 tbsp of the mixture to form balls using hands.
  4. Coat for Texture: Roll in chopped nuts, bacon bits, or herbs until fully coated.
  5. Chill: Transfer the cheese balls to a lined plate or tray, and chill for at least 30 minutes, until firm, before serving.

Notes

  • Be sure the cream cheese is softened completely for easy mixing.
  • A cookie scoop for uniform ball size works well.
  • Vary the coatings — crushed pecans, sunflower seeds, dried herbs.
  • Keep in an air-tight container in the fridge for 4–5 days.
  • Enjoy with celery sticks, cucumber slices or keto crackers.
