  • 6 bacon (Cooked and Crumbled)
  • ½ Red Onion (Finely Chopped)
  • ¼ Shredded Cheddar Cheese
  • ¼ Sunflower Seeds (Optional)
  • ½ Mayonnaise
  • 1 Apple Cider Vinegar
  • 1 Erythritol Or Preferred Keto Sweetener
  • Salt and Pepper To Taste

Method
 

  1. Cook the bacon: In a skillet, cook the bacon until crispy. Drain on paper towels and crumble once cooled.
  2. Prepare broccoli: Rinse and chop broccoli into bite-sized florets.
  3. Mix the dressing: In a small bowl, whisk together mayonnaise, apple cider vinegar, sweetener, salt, and pepper.
  4. Combine ingredients: In a large mixing bowl, add broccoli, bacon, cheddar cheese, red onion, and sunflower seeds.
  5. Add dressing: Pour the dressing over the salad and toss until everything is well coated.
  6. Chill: Let the salad rest in the fridge for at least 10 minutes before serving to allow flavours to meld.
  7. Serve: Enjoy chilled or at room temperature.
