Ingredients
  

  • 1 cup fresh blueberries
  • ½ cup heavy whipping cream
  • 2 tbsp cream cheese (softened)
  • 2 tbsp powdered erythritol
  • 1 tsp vanilla extract
  • 1 tbsp butter
  • 1 tsp lemon juice

Method
 

  1. Preparing the Blueberries: Combine fresh blueberries, butter and lemon juice in a pot on the stove. Cook over medium heat for several minutes, until the berries soften and their juices run to make a light compote.
  2. Prepare the Cream Base: In a mixing bowl, beat heavy cream, softened cream cheese, erythritol and vanilla extract. Beat using a hand whisk or an electric mixer until creamy, fluffy and slightly stiff.
  3. Combine: Once the blueberry mixture cools slightly, gently fold it into the creamy base. This ensures the cream stays airy while blending in the berry flavor.
  4. Chill: Once the mixture is combined, divide it into serving bowls or cups. Chill for 30 minutes or more to set the dessert and blend the flavors together perfectly.
  5. Serve: Garnish with a couple of fresh blueberries or a few nuts as desired, and eat up your keto-friendly treat!

Notes

  • Use very cold heavy cream for a superior whipped texture.
  • Don’t cook blueberries to death; they want to remain in partial chunks.
  • To make it sweeter, add more erythritol.To make it less sweet, cut back on the amount of erythritol.
  • May replace with frozen blueberries if fresh are unavailable.
  • It can be served in small glasses for a prettier presentation.
