Ingredients
  

  • lbs beef chuck, cut into cubes
  • 2 tbsp olive oil or ghee
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 2 celery stalks, sliced
  • 1 zucchini chopped
  • 1 cup turnips or radishes (as potato substitute)
  • 4 cups beef bone broth
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Equipment

  • 1 Large pot or Dutch Oven
  • 1 Sharp knife and cutting board
  • 1 Wooden spoon
  • 1 Measuring cups and spoons

Method
 

  1. Sear the Beef: Heat olive oil or ghee in a dutch oven, and add the cubed beef, browning on all sides to seal in goodness.
  2. Cook Aromatics: Add onions, garlic, and celery, sautéing until fragrant and slightly softened.
  3. Add Vegetables: Toss in zucchini and turnips (or radishes) instead of potatoes to keep the dish low-carb
  4. Add Broth & Seasonings: Add beef bone broth to pot and add in tomato paste, thyme, rosemary, salt and pepper for depth and flavor.
  5. Simmer the Stew: Cover and allow to simmer over a low heat for approximately 1.5 hours, until the beef is tender enough to be cut with a fork.
  6. Rest and Serve: Turn off heat, let the stew rest for 10 minutes to allow flavors to settle, then serve warm and enjoy.

Notes

  • Opt for beef chuck or short ribs, which both respond better to long and slow cooking.
  • Swap turnips for radishes for less carbs.
  • Throw in some mushrooms for added flavour and zero added carbs.
  • Cook low and slow for deeper flavour.
