Sear the Beef: Heat olive oil or ghee in a dutch oven, and add the cubed beef, browning on all sides to seal in goodness.
Cook Aromatics: Add onions, garlic, and celery, sautéing until fragrant and slightly softened.
Add Vegetables: Toss in zucchini and turnips (or radishes) instead of potatoes to keep the dish low-carb
Add Broth & Seasonings: Add beef bone broth to pot and add in tomato paste, thyme, rosemary, salt and pepper for depth and flavor.
Simmer the Stew: Cover and allow to simmer over a low heat for approximately 1.5 hours, until the beef is tender enough to be cut with a fork.
Rest and Serve: Turn off heat, let the stew rest for 10 minutes to allow flavors to settle, then serve warm and enjoy.
