Ingredients
  

  • 1 lb ground beef
  • 1 small onion, chopped
  • 2 cloves garlic, minced
  • 1 cup shredded cheddar cheese (divided)
  • 1 cup shredded mozzarella cheese
  • 8 low carb tortillas or cheese tortillas
  • cups sugar-free enchilada sauce
  • 1 tsp chili powder
  • 1 tsp cumin powder
  • Salt and pepper, to taste
  • Fresh cilantro, for garnish (optional)

  • 1 Wooden spoon or spatula
  • 1 Baking dish (9x13 inch)
  • 1 Measuring cups and spoons
  • 1 Cutting board and knife
  • 1 Aluminum foil

Method
 

  1. Prepare the Beef Filling: In a large skillet, heat the skillet over medium heat. Once it is hot, put beef on, breaking slightly as it cooks. Add chopped onion and garlic, cook until beef is browned and onions are soft.
  2. Season the Mixture: Chili powder, cumin, salt, pepper Combine, mix well and let simmer for 1–2 minutes to allow the flavors to meld.
  3. Assemble the Enchiladas: Lay out the tortillas. Add a spoonful of beef mixture and cheddar cheese to each one, then roll tightly.
  4. Arrange in Baking Dish: Roll up and place in a greased baking dish seam-side down. For the enchilada sauce: Pour over filled pans evenly.
  5. Add Cheese Topping: Top with fresh mozzarella and the other 1/2 cup of cheddar cheese.
  6. Bake and Serve: Wrap in foil and bake for 20 minutes at 375°F (190°C) Uncover the foil and bake 5 more minutes until cheese is bubbly. Garnish with cilantro before serving.

Notes

  • For variety you can use shredded rotisserie chicken in place of beef.
  • Add cream cheese to the beef filling for an added creamy texture.
  • For extra flavor, mix in chopped bell peppers or jalapeños.
  • Also can be made ahead, and place in the fridge until ready to bake for an instant pre-cooked meal.
  • Ensure you have the freshest taste by using homemade sugar free enchilada sauce.
