Heat Oil: First, heat about a teaspoon of coconut oil in a large saute pan or a heavy pot over medium heat, until melted.
Saute Aromatics: Stir in the chopped onions, minced garlic and grated ginger and cook for 3–4 minutes or until lightly golden and fragrant.
Add Spices: Stir in turmeric, cumin, curry powder, and chili flakes so the onions are flavoured nicely with the spices and tasty.
Cook Beef: Place beef cubes into the skillet and sear on all sides until lightly browned, locking in juices.
Simmer Curry: Add the coconut milk, lower the temperature, and simmer the beef gently for 30–40 minutes, or until tender.
Season & Garnish: Season with more salt and pepper as needed and garnish with fresh chopped cilantro, then serve hot over cauliflower rice or zucchini noodles.
