Ingredients
  

  • 1 lb (450g) beef (cut into cubes)
  • 1 cup full-fat coconut milk
  • 2 tbsp coconut oil
  • 1 medium onion (finely chopped)
  • 3 cloves garlic (minced)
  • 1 tsp fresh ginger (grated)
  • 1 tsp turmeric powder
  • 1 tsp cumin powder
  • 1 tsp curry powder
  • ½ tsp chili flakes (optional)
  • Salt and pepper to taste
  • Fresh cilantro for garnish

Equipment

  • 1 Large skillet or pot
  • 1 Wooden spoon

  • 1 Measuring Spoons/Cups

Method
 

  1. Heat Oil: First, heat about a teaspoon of coconut oil in a large saute pan or a heavy pot over medium heat, until melted.
  2. Saute Aromatics: Stir in the chopped onions, minced garlic and grated ginger and cook for 3–4 minutes or until lightly golden and fragrant.
  3. Add Spices: Stir in turmeric, cumin, curry powder, and chili flakes so the onions are flavoured nicely with the spices and tasty.
  4. Cook Beef: Place beef cubes into the skillet and sear on all sides until lightly browned, locking in juices.
  5. Simmer Curry: Add the coconut milk, lower the temperature, and simmer the beef gently for 30–40 minutes, or until tender.
  6. Season & Garnish: Season with more salt and pepper as needed and garnish with fresh chopped cilantro, then serve hot over cauliflower rice or zucchini noodles.

Notes

  • You will get the best keto benefits with full-fat coconut milk.
  • For more richness, stir a tablespoon of ghee into the pot while the soup simmers.
  • For your preferred taste spice level can add chilli flake.
  • If you have small, even-size large beef cubes it will cook faster.
  • Wait 5 minutes before serving the curry to let flavours concentrate.
