Preheat Your Oven: Preheat your oven to 375°F (190°C) so it’s ready to go and at the perfect temperature for even cooking.
Mix Together: In a large bowl, mix together the ground beef, egg, almond flour, shredded cheese, onion, garlic, parsley, paprika, salt and pepper. Mix gently until just combined.
Loaf shapes: Form the meat into a loaf shape and put it in a baking dish or loaf pan.
Wrap with Bacon: Arrange bacon strips over the meatloaf, overlapping slightly, and tuck the ends underneath for a snug fit.
Bake: Transfer to the oven and bake for 55–60 minutes, or until the internal temperature is 160°F (70°C).
Rest & Serve: Pull out of the oven, then let rest for 10 minutes to sort of retain the juice, then slice and serve warm.
