Ingredients
  

  • 2 lbs ground beef (or beef and pork mix)
  • 1 cup almond flour
  • 2 large eggs
  • 1 cup shredded cheddar cheese
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tbsp fresh parsley, chopped
  • 1 tsp smoked paprika
  • Salt and pepper to taste
  • 12 strips bacon

  • 1 Loaf pan or baking dish
  • 1 Knife and Cutting Board
  • 1 Foil or parchment paper
  • 1 Meat thermometer

Method
 

  1. Preheat Your Oven: Preheat your oven to 375°F (190°C) so it’s ready to go and at the perfect temperature for even cooking.
  2. Mix Together: In a large bowl, mix together the ground beef, egg, almond flour, shredded cheese, onion, garlic, parsley, paprika, salt and pepper. Mix gently until just combined.
  3. Loaf shapes: Form the meat into a loaf shape and put it in a baking dish or loaf pan.
  4. Wrap with Bacon: Arrange bacon strips over the meatloaf, overlapping slightly, and tuck the ends underneath for a snug fit.
  5. Bake: Transfer to the oven and bake for 55–60 minutes, or until the internal temperature is 160°F (70°C).
  6. Rest & Serve: Pull out of the oven, then let rest for 10 minutes to sort of retain the juice, then slice and serve warm.

Notes

  • Combine beef and pork for maximum juiciness.
  • Don’t over-mix the meat mixture—it can make the loaf dense.
  • For super crispy bacon, place the meatloaf under the broiler for just 2–3 minutes at the end.
  • Keto-friendly sugar-free ketchup or tomato paste would be a great add for extra flavor.
